Bring the family into the kitchen for pizza night

A few months ago a dear friend of mine wrote on my Facebook wall.

She left a few sentences about life happenings, commented on a picture I had posted and then ended by saying: “We had pizza last Friday night and it made me think of you. Do you still eat pizza every Friday night?”

Why, yes… yes, we do!

Typically we consume some sort of pizza product here at casa de phillips every Friday evening. Growing up, my parents would always spring for pizza on Friday evenings. Living “in the country”, this meant that someone had to drive “all the way into town” to retrieve said pizza and hurry home with it before it cooled. (Such distances have now become meaningless to me since I reside in a large metropolitan area where crossing suburb lines on a daily basis is as common as taking out the garbage). I have carried on the Friday night pizza tradition into my adult life.

When the husband and I were newlyweds, it was pizza made with instant crust and turkey pepperoni.

Once we hit the double-income, no kids, minimal student loans stride, it was $5 gourmet bake and take pizza from the local grocery store.

Now that we have children and I have truly figured out the complexities of yeast (always use water the temperature of a baby bottle), I fashion a variety of pizza-type substances on Friday evenings.

I construct pizza braids, pizza rolls, pizza rings and pizza calzones.

On occasion, I make the standard pizza pie.

The great thing about Pizza Friday is that the entire family wants in on the action. Sure, four chefs in the kitchen can get a bit crazy and someone inevitably will consume far too much of the mozzarella. However, it provides for some fun bonding time.

Another great thing about Pizza Friday: my children try pizza toppings they would never have allowed touch their lips otherwise. Mushrooms transform from “yuck” to “Hey, this will make an excellent nose on my pizza’s face!” on pizza night. Green bell peppers become finger food as we work on on pizza masterpieces. A variety of spices are tossed onto finished pies to add that final blast of flavor.

Last Friday, I rolled out the pizza crust and layed out a buffet of toppings. I then called in the family to each construct their own perfect pizza.

I think the pictures show that this family tradition is keeper.

Spaghetti and Eyeballs…Oops, I Mean Meatballs

I made spaghetti and eyeballs for dinner. Take your basic meatball recipe and add pimento-stuffed olives for eyeballs before baking.

Arrange on a plate and add a sliver of carrot for a tongue. Shriek!!

Spaghetti and meatballs has always been one of Nicholas’ most favorite foods so he had lots of fun eating this :)

Turkey Leg…Cupcakes?

Cupcakes are Awesome!
Serving them is guaranteed to bring a on smile,
whether you are 4 or 44 or 84!
Cupcakes are yummy.
They can be a pure indulgence of flour and sugar,
or something a bit healthier like a whole grain muffin.
Add nuts and or fruit and it might even be considered
“good for you”.
Cupcakes are easy.
Starting with a cake mix you can have cupcakes in the oven within moments.
In 18 – 22 minutes your little cake morsels are ready to come out of the oven.
Now, the real fun begins.
One can merely icing a cupcake,
or add a festive touch with sprinkles.
Or…one can take cupcakes to an entirely artistic level…
think – looks too good to eat!

And with Thanksgiving being a major part of our central theme…
Well, I could not resist making Turkey Leg Cupcakes!
I started with cupcakes ordered from WalMart.
I did say Cupcakes are easy…this just makes it easier yet!
For $5.00 one can special order 12 cupcakes with only icing,
served up in a protective plastic container.
Grab a box of corn flakes, a bunch of plain donut holes,
and an extra can of icing…
again, think easy!
The prep work:
using the following picture as a guide
cut out the “drumstick knuckles”from card stock.
Cut a pointed end to insert into donut hole.
I pre-cut 12 of them.
In a zip lock bag, crush several cups of corn flakes.
Empty well crushed flakes into a large bowl.
Carefully place the donut hole “off-center” for the most
authentic turkey leg look.
Now, cover the donut hole with icing, sealing it to the base.
Once covered, you will dip the cupcake into the flakes…
Viola! A done-to-perfection look.
Pierce the donut with a sharp knife.
Insert the knuckle.
and you got yourself a Turkey Drumstick Cupcake

Who wants a drumstick?

Add a bunch of fun-loving girls,
turkey leg party hats for everyone,
Turkey Leg Cupcakes all around…
And you have a recipe worth repeating!
